Fruit crumble recipe

If you know you know: this one is a foundational dessert of our Wasteless Dinners. It is a no-brainer and a huge success for anyone who has a basket of decaying fruits, an oven and one hour to spare.

We usually write down our recipes for four portions, but this one is so tasty that we want to make sure to be generous with the servings.
If you want to really please that sweet tooth, or are just looking for the perfect companion for that leftover ice cream abandoned in the freezer since August, we recommend pairing with ice cream or vanilla sauce.

Ingredients (serves 6)
For the crumble:
90g vegan butter
190g plain white flour
60g rolled oats
100g brown sugar
½ tsp sea salt, 1 tsp cinnamon
For the fruit filling:
1.5kg of fruit such as plums/apples/pears/apricots (or a mix of them)
1 tbsp cornstarch
Optional: 2 tbsp lemon juice, 30-50g sugar for extra sweetness
Instructions
To prepare the crumble, cut the vegan butter into small cubes and place them in a medium bowl with the white flour. Rub together until the mixture is evenly combined. Add the oats, brown sugar, sea salt, and cinnamon, then mix until the texture becomes crumbly and sandy. Set aside.
Preheat the oven to 180°C. While it heats, cut the fruit into small cubes and place them in an oven-safe dish. Toss with the cornstarch and, if desired, a splash of lemon juice and a bit of sugar.
Evenly spread the crumble mixture over the fruit. Bake for 30–40 minutes, or until the topping is golden brown and the fruit juices are bubbling up around the edges.
Enjoy warm, ideally with ice cream or vanilla sauce.
